Domaine Darviot-Perrin, Chassagne-Montrachet “La Bergerie”
“La Bergerie” lies only about 250 meters south of the Chassagne-side of Grand Cru Bâtard-Montrachet and Darviot-Perrin’s small stand of organic vines are equipped with substantial age, with the first being planted in the 1920s. The grapes are whole-cluster pressed, fermented using ambient yeasts, and the resulting wine is aged in 25% new Allier oak barrels for 12 months. This is followed by six additional months in stainless steel tank before the wines are bottled. In my limited experience, I’ve found Darviot-Perrin’s Chassagne bottlings to be more reductive than others, so these might need a longer decant to open up.
