Domaine Darviot-Perrin, Beaune “Longbois”
Situated above two Premier Crus and overlooking the town of Beaune, Darviot-Perrin’s “Longbois” lieu-dit is at the top of the slope, approaching nearly 1,000 feet. Although vines here were planted in the 2000s, this young raw material combined with cooler temperatures creates a wine of superb tension and energy. The organic grapes are whole-cluster pressed and fermented using ambient yeasts. The resulting wine is aged in 25% new Allier oak barrels for 12 months which is followed by six additional months in stainless steel before bottling without filtration.
